"WAGASHI"

 From old time, people called “fruit” of nuts and the fruit of the grass of natural world, and when the Kanji was introduced, they exposed the character of “ kashi” meens sweet. “kashi” was the word that contained fruit and nut.
Originally it was the thing which made up for the lack of the grains of the staple food, however it was also luxurv goods beause many kashi has sweetness.
“kashi” has been changed greatly with the development of “ the tea ceremony”.
At the tea celemony, people eat “kashi” as savory with “usucha”which is weak green tea and “koicha” which is strong green tea. “kashi” has been developed not only taste but more beauty decorations.
The luxurv goods sweetest befor sugar were persimmons. After the sugar manufacture had started, “wasanbon” which is refined sugar in particular contributed to the development of the japanese seet by the unique flavor and moderate sweetness.
Japnese sweet has art of beuty decorations, the rawmaterials of the sweet are examined closely. For example, the Japanese sweet craftssman finished summer sweet with “kuzu” to make people feel cool. Japanese seet has veen developed with sense of the four seasons.
